The potatoes are baked in a high heat oven to create a dense layer of potato rounds. They are then topped with butter, broth, and herbs. This results in incredibly creamy centers with crispy exterior.

Fondant potatoes are a French way of cooking potatoes. This is a show-stopping side dish. Fondant potatoes are not made by melting potatoes. Instead, they are first browned in a skillet and then baked in the oven. The skillet step is eliminated when melting potatoes. Instead, the potato rounds are placed directly in the oven. Melting potatoes is quicker and easier to prepare, but they are just as delicious.

These potatoes are easy to prepare but there are some tips that will make them even better.

Most melting potato recipes call for russet or Yukon gold potatoes. Yukon gold potatoes are considered an all-purpose variety of potatoes due to their stellar starch-water ratio. Yukon potatoes are a great choice for making delicious dishes that have a golden exterior and a soft, velvety texture.

Russet potatoes make great melting potatoes. Because of their thick skin, fluffy flesh and light texture, russet potatoes are great for baking.

Yukon gold potatoes and russet potatoes both produce buttery, melt in-your-mouth potatoes. These potatoes can be paired with almost any dish. You can serve melted potatoes with roast chicken, steak, or pork loin. They can also be served as a side dish to holiday main courses.

Melt-In-Your-Mouth Melting Potatoes Recipe

Ingredients

  • 4 cloves garlic
  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oils
  • 1 teaspoon kosher Salt
  • 1/2 teaspoon black pepper
  • 2 pounds Yukon gold, russet potatoes or Yukon gold. About 4 to 5 medium potatoes
  • 2-3 sprigs of fresh rosemary
  • 1 cup vegetable or chicken broth

Instructions

  1. Place a rack in central oven. Preheat oven to 450°F. Four cloves of garlic should be mashed and peeled.
  2. Place 2 tablespoons of unsalted butter in a microwave-safe bowl. Microwave the butter for 10 seconds, stirring every time, until it melts. Mix in 2 tablespoons olive oil, 1 teaspoon kosher salt and 1/2 teaspoon black pepper.
  3. If you'd like, remove the skins from 2 lb. Yukon gold potatoes or russet potatoes. The potatoes' rounded ends can be removed. Next, cut the potato crosswise into 1-inch rounds. You will need to chop 2 to 3 rosemary stem leaves until you have 1 tablespoon. Mix the butter with the potatoes and rosemary until well coated.
  4. Place the potatoes cut sideways on a 9x13-inch sheet of metal baking pan. Spread the butter mixture on top of the potatoes.
  5. Bake the potatoes for 15 minutes, or until they are easily flippable. After the potatoes have been flipped, continue roasting for 15 minutes more until they are deep golden brown.
  6. Remove the potatoes from the oven. Add one cup of broth to the pot and then add the garlic cloves. Continue roasting for 15 minutes or until the potatoes have absorbed most of the broth. Enjoy!
