How to Freeze Potatoes before Baking

It's not a secret that I love potato-based dishes. When I learned that Chef Lucas Sin had some tricks to make roasted sweet potatoes even more delicious, I was intrigued and determined to find out more! Chinese street food is baked sweet potatoes, which are usually found in winter. Sin said that they make a great snack and are very nutritious.

Sin stated in an Instagram highlight tutorial that "Yeah it's just whole roasted sweet potatoes, it is not elevation, it just what Chinese people have done forever." So what's the secret to Sin's success?

Before you roast, freeze

Sin advised that you wash the sweet potatoes first, then "chuck" them in the freezer to bake them. Sin said that freezing potatoes "crystallizes water inside the potato without puncturing skin" and allows for a fluffy, potato-like texture inside.

After letting them rest for a while, heat your oven to high (Sin recommended 450°F). Depending on how large the sweet potatoes are, bake them for 40 to an hour until the sugar bubbles out of the potatoes. He said that you shouldn't actually overcook potatoes. The more sugar that's leaking out, the better. When it reaches "caramelization", you know it is done.

These can be eaten as-is or you can "jazz" them with sauces and toppings to create a more flavorful treat.

Instructions

  1. Wash/scrub sweet potatoes.
  2. Sweet potatoes should be frozen for at least 2 hours
  3. Preheat oven to 450°F
  4. Bake pans with parchment paper.
  5. Sweet potatoes can be roasted for between 40 and 1 hour depending on their size.
  6. For potatoes to be caramelized, the skin should come off the flesh.
  7. You can add optional toppings, or just enjoy it as is.

Sin suggests adding spiced honey and creme fraiche to make this a "easy, healthy dessert." Sin suggested using any toppings that are "tasty, textured." He chose toasted oats and sesame seeds, as well as coconut and candied almonds.

Sin topped it with salt and raw sugar. Sin stated, "actually yes it is kinda elevated." This bejewelled vegetable dessert is a beautiful sight. We're going to buy sweet potatoes and are excited to find the perfect snack recipe.
