Ina Garten's Make Ahead Goat Cheese Mashed Potatoes recipe
Ingredients

3 lb large yukon-gold potatoes, peeled into 3/4-inch pieces

5 large garlic cloves, peeled

Freshly ground black pepper and kosher salt

7 to 8 ounces of garlic-and-herb goat's cheese at room temperature

4 tablespoons (1 1/2 stick) of unsalted butter at room temperature

1 1/2 cups sour cream

1/2 cup half-and half or milk

1/2 cup fresh grated Parmesan cheese
Instructions

Add the potatoes, garlic, 1 teaspoon salt and enough water to cover them in a large saucepan. Bring to a boil on high heat. Reduce heat to a simmer and let the potatoes cook for 20-25 minutes until they are tender.

Drain the garlic and potatoes, then blend them in a food processor fitted with the coarsest cutting blade. Once the potatoes have cooled, add the butter, goat cheese, half-and-half and 4 teaspoons salt to the mixture. Blend until smooth.

Place the mixture in an oval baking dish measuring 9x12x2inches. Smoothen the top. Sprinkle the parmesan on top

Bake at 375°F for 30-40 minutes until the edges are lightly browned. Serve immediately
