How to Make Ina Garten's Make Ahead Mashed Potatoes

Garden's make-ahead potatoes are just like any good mash. They start with a simple peel and dice process, then boil. They can be mashed once they are fork-tender.

Two unique ingredients elevate Garten's dish to a new level in his recipe. Sour cream is a substitute for butter and milk. Don't worry, the potatoes will still have a creamy texture thanks to the sour Cream. Additionally, the sourcream harmoniously complements the second, earthy and savory goat cheese.

Butter lovers, don't be alarmed! Although this mash is full of flavor, it is not the main attraction. This dish is even more delicious when you add half and half to give it a rich buttery flavor.

Sprinkle the parmesan cheese on top of the holiday mash after it has been placed in a baking dish. You can make it ahead of time or bake it immediately, depending on your preference. These mashed potatoes can be kept in the refrigerator for up to 3 days if they are not baked. A foolproof side dish is a must-have for your big day.

Ina Garten's Make Ahead Goat Cheese Mashed Potatoes recipe

Ingredients

  • 3 lb large yukon-gold potatoes, peeled into 3/4-inch pieces
  • 5 large garlic cloves, peeled
  • Freshly ground black pepper and kosher salt
  • 7 to 8 ounces of garlic-and-herb goat's cheese at room temperature
  • 4 tablespoons (1 1/2 stick) of unsalted butter at room temperature
  • 1 1/2 cups sour cream
  • 1/2 cup half-and half or milk
  • 1/2 cup fresh grated Parmesan cheese

Instructions

  1. Add the potatoes, garlic, 1 teaspoon salt and enough water to cover them in a large saucepan. Bring to a boil on high heat. Reduce heat to a simmer and let the potatoes cook for 20-25 minutes until they are tender.
  2. Drain the garlic and potatoes, then blend them in a food processor fitted with the coarsest cutting blade. Once the potatoes have cooled, add the butter, goat cheese, half-and-half and 4 teaspoons salt to the mixture. Blend until smooth.
  3. Place the mixture in an oval baking dish measuring 9x12x2inches. Smoothen the top. Sprinkle the parmesan on top
  4. Bake at 375°F for 30-40 minutes until the edges are lightly browned. Serve immediately
